We eat peppers in almost everything. There’s always a bag of peppers in our fridge, ready to brighten up our next meal. Except green peppers, I still find them irrelevant although I’m training
myself to eat them more. I’ve never ever stuffed and roasted a pepper though, which got me thinking – FAST DAY! 2 of these roasted pepper halves comes in at a saintly 215 calories.

Pepper halves stuffed with a spicy tomato Quorn mince filling
Ingredients

Preheat your oven to 200C/fan 180C/Gas Mark 6.
Cut the peppers in half through the stalk, keeping this in so the peppers hold their shape when roasting. Remove the seeds and membrane, then place onto a baking sheet and cook in the oven for about 20 minutes.
Meanwhile, put the Quorn, tomatoes and seasoning into a pan. Simmer for 10-12 minutes until the Quorn is cooked.
Scoop the mince mixture into the pepper halves once they are cooked, and sprinkle with grated cheese. Pop back into the oven for 10-15 minutes until the cheese has melted.
Serve!

- 1 tin chopped tomatoes
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp Schwartz Piri Piri Perfect Shake seasoning
- 30g lighter mature cheddar cheese, grated
