CHICKEN GYROS WITH HOMEMADE TZATZIKI


Healthy Chicken Gyros layered with crisp grape tomatoes, lettuce and homemade tzatziki.

Serves: 4-6

Ingredients
For Chicken
4-6 whole wheat Naan or Flatbread
1 tbsp coconut oil
1½ pounds boneless, skinless chicken thighs (trimmed of fat and cubed)
½ large onion, thinly sliced
½ tsp cumin
1 tsp paprika
½ tsp garlic powder
¼ tsp dried thyme
1 tsp dried parsley
¼ tsp dried oregano
sea salt, to taste
For Toppings
Grape tomatoes
Lettuce
Tzatziki Sauce

Instructions
In a large bowl, season cubed chicken with cumin, paprika, garlic powder, thyme, parsley and oregano; set aside.
In a large skillet, heat oil over medium-high heat.
Sauté onions for 2-3 mins or until translucent.
Add cubes of chicken to skillet, combining with onions. Continue to cook for about 5-7 minutes until done.
Lower heat and salt to taste; continue to cook until most of the liquid has been absorbed.
To assemble, put chicken mixture inside naan or flatbread; layer with tomatoes, lettuce and tzatziki.
Wrap and serve.
